Hong Kong Style Macaroni in Soup with Spam and Fried Egg

Macaroni in Soup! Yes, you heard it right! In Hong Kong, it is extremely common to have macaroni in soup (餐蛋湯通粉). It is typically eaten in the morning as breakfast. When my partner first heard about mac in soup, he thought that was weird and unacceptable. After a while of exposure, he fell in love with it! We would always order it for breakfast on Sunday mornings at local cafes. Now, as we are no longer living in Hong Kong, we crave for it!

INGREDIENTS (4 SERVINGS)
Macaroni 4 Servings (10oz / 300g)
Spam1 Can (12oz / 340g)
Eggs4
Mixed Greens (or Frozen Green Peas)¼ Cup / 50g
Chicken Broth4 Cups / 1L
[SOUP] Milk4 Tablespoons
[SOUP] Soy Sauce1½ Teaspoons
[SOUP] Salt½ Teaspoon
[SOUP] White Pepper (optional)A pinch

DIRECTIONS

  1. Cook the macaroni in a pot of hot boiling water. Set aside when ready.
  2. In a separate pot, boil the chicken broth. When it’s at boiling pot, add the mixed greens and [SOUP] ingredients and boil for a few minutes under medium-low heat .
  3. Cut the spam into slices and pan fry them until browned and make sunny-side-up or over-easy eggs. Set aside.
  4. Serve each plate with some macaroni, soup then top with a few slices of spam and a fried egg.
  5. DŌZO!
